Directions
Step 1:

Heat vegetable oil in a large pot over medium-high heat until oil reaches about 350ºF.

Step 2:

Slice off the stem end of the onions with a knife, keeping the onion whole. Remove the onion skins and first tough layer. Cut a small piece off the side of the onions to keep them level on the cutting board. Slice into 1/2-inch rings and separate the pieces. Set aside with other vegetables.

Step 3:

Combine 1 cup of flour, garlic powder, salt and pepper and spread into a large dish. Mix remaining 1 cup of flour and beer together in a medium bowl. Dredge vegetables in flour mixture, then dip into beer batter, shaking off any excess.

Step 4:

Fry onions and veggies in oil for about 3 to 4 minutes, then remove and place on paper-towel-lined plates to drain.

Step 5:

Serve hot with lemon wedges and dips.
