Thai Chicken Noodle Soup

Heat olive oil in a large sauce pan over medium heat. Add garlic and pepper and cook until vegetables are soft. Add chicken broth and stir to remove any browned bits from the bottom of the pan.
Bring to a boil then stir chicken, ginger, cumin, coriander, red pepper flakes, cayenne pepper and Reames® Frozen Egg Noodles.
Simmer for about 15 minutes, or until noodles are just tender. Add coconut milk, peas and carrots and return soup to a low boil. Simmer for five more minutes, or until peas and carrots are tender. Season to taste with salt and pepper.
Stir in cilantro, green onion and lime juice. Garnish with additional peppers, green onions or cilantro, if desired.
