Shrimp Orzo Salad With Dill and Tomatoes
Go Mediterranean with the flavors of feta, dill and tomatoes in this rustic shrimp and orzo salad.

Bring a large pot of salted water to a boil. Add orzo and simmer until al dente. Drain and transfer to a large bowl to cool.
Season shrimp with salt and pepper. Heat a skillet with oil. When hot, add shrimp and cook until they turn pink and opaque. Flip and cook an additional 2 minutes.
Add shrimp to the orzo. Add dill, tomatoes, cucumber, onion, scallions and a few grinds of black pepper.
Add dressing to taste and toss well. Add feta and stir carefully. Top with salad kickers for crunch.
