Seared Filet of Beef with Arugula Salad
Pair a salad of cherry tomatoes, red onions, chives and arugula with beef filets seared to full-flavor with Girard’s® Light Balsamic Dressing.

Prep Time: 20 Minutes Cook Time: 17 Minutes
Preheat the oven to 375°F.
Heat oil in an ovenproof skillet over medium-high heat.
Season the beef with salt and pepper.
Sear the fillets 2 minutes per side.
Place the pan in the oven for 10 minutes or longer until desired temperature for the meat is reached.
Brush with 2 tablespoons Girard’s® Light Balsamic Dressing and loosely tent the meat with a piece of aluminum foil for 5 minutes.
Combine the cherry tomatoes, red onion and chives in a small bowl.
Toss the arugula with the remaining dressing and place half of the arugula on each plate. Place the filet on or next to the arugula. Spoon the tomato mixture on top of the filet. Serve.
