1/2 cup Cardini’s Garlic Lemon Caesar Dressing

1 pound baby bella mushrooms cut into 1/2-inch slices

Salt and freshly ground black pepper

1/4 cup olive oil

2 tablespoons chopped fresh parsley

4 cups arugula

Directions

Preheat oven to 400° F.

Adjust oven rack to the middle position. Place mushroom slices on a large baking sheet and brush them with olive oil. Season mushrooms with salt and pepper and place them in the oven and roast for 10 minutes.

Remove from oven and drizzle mushrooms with Cardini’s® Garlic Lemon Caesar Dressing. Return to the oven for 3 to 4 minutes. Sprinkle with parsley.

Arrange arugula on plates and divide mushrooms among the plates. Spoon any pan drippings over mushrooms.

Serve.
