Mini Pineapple Upside Down Cakes

Preheat oven to 350° F.

Spread almonds onto a baking tray and bake 3 to 5 minutes or until golden, remove and cool.  Place split Sister Schubert’s® Hawaiian Dinner Rolls cut side up on a baking tray. Using 1 tbsp. butter, divide and spread some onto each roll. Place in oven and bake for 4 to 5 minutes or until just golden and slightly crispy. Remove from oven and place each roll half onto a plate.

Place 3 tbsp. butter in a small microwave safe pie plate. Microwave 1 minute or until melted. Stir in brown sugar and return to microwave for 1 minute. Remove and mix until well combined. Place pineapple rings into dish, spoon the brown sugar mixture over all and microwave 2 minutes. Remove and place each ring on top of rolls. Spoon sugar syrup over all and sprinkle with toasted almonds. Serve with vanilla ice cream or sweetened whipped cream. Serves 4.
