Directions
Step 1:

Heat oil in large soup pot over medium heat. Add onion, celery, bell pepper and garlic. Sauté 5 minutes or until softened.

Step 2:

Stir in stock, clam juice and tomatoes. Add bay leaf, thyme sprigs, Creole seasoning, potatoes and corn. Season with salt and pepper.

Step 3:

Bring to boil. Reduce heat to low, cover and simmer 20 to 25 minutes, stirring occasionally, until potatoes are tender.

Step 4:

Add seafood and fish and cook about 5 minutes, until cooked through and/or clams and mussels open (discarding any that do not open).

Step 5:

Ladle into bowls and serve with bread rolls.
