Sous Chef Tips: How to Dice a Tomato

Tomatoes are delicate fruits that can be tough to prepare. But if a ripe tomato is mishandled, its taste and texture can be compromised. Dicing tomatoes is the best way to retain all of its juicy flavors. Learn how to dice a tomato properly with these tips and techniques.

Prep Tips & Tools

  • Wash and dry the tomatoes, removing any stickers from the skin.
  • Use a very sharp paring knife or small serrated knife to slice through the tomato’s thin yet strong skin without denting or squishing it. A chef’s knife is recommended for larger tomatoes.

How to Dice Tomatoes

Step 1: Gently slice the tomato into even rounds. Cut closer circles for a smaller dice and thicker circles for larger dice.

Step 2: Place a few of the rounds in a stack and cut them into uniform strips. Keep the strips close together in the circle shape.

Step 3: Turn the strips 90 degrees and cut across them to create a dice.

Step 4: Using your hands, a spoon, or a bench scraper move the diced tomatoes to a bowl to retain their juices. Never use the edge of your knife.
